NYC & Soba Noodles

Simple Soba Noodles

8-12 oz. buckwheat soba noodles

1 tbs. rice vinegar or wine

2 tbs. sesame oil

2 tbs. soy sauce

1 bunch (about 6-8) chopped green onions

1/2 cup of shredded carrots

1 bunch of chopped cilantro

1 tbs. of toasted sesame seeds

salt to taste

Cook noodles according to package in boiling water, for no longer than 6-8 minutes. Immediately drain noodles in a strainers and run cold water over them. Next add the remaining ingredients and salt to taste.

Serve right away or chilled - I prefer the latter.

Add tofu seasoned anyway you like or try Whole Foods Golden Sesame Tofu and any Sweet Chili variety.

Another great addition is a few slices of avocado and cucumbers. Yum- yum.
